Steal This Meal: Mushroom Soup With Primalfat Coconut Ghee

If you’ve been following us for any amount of time then it’s likely that you’re already familiar with the awesomeness that is Pure Indian Foods ghee – a Whole30® Approved, lusciously delicious cooking (and just plain eating) fat. Yah, that’s right, we said Coconut. Ghee. As in half organic virgin coconut oil and half organic grass-fed ghee. Blending coconut oil, which naturally has a lower smoke point, with ghee, increases the overall smoke point of the product making it ideal for all of your cooking needs.

Don’t worry, we’ll wait to continue while you dab that drool off your chin.

We were lucky enough to get a few samples of this lovely gem in the mail not too long ago (in fact, a jar of it was coveted by certain members of the Whole9 Seminar Team during our weekend getaway), and Sandeep shared one of his favorite recipes with us so we could try it out in style. So, without further ado, please feel free to steal this meal…

Creamy Mushroom Soup

Serves 4

(Serve this soup as a first course to a great meal, or alongside a salad.)

2 tablespoons PRIMALFAT ™ Coconut Ghee
1 large leek, trimmed and sliced
1 pound fresh gourmet mushrooms, such as shitake, Portobello, Oyster, or Crimini, coarsely chopped
Salt and freshly ground black pepper
3 cups chicken or vegetable stock
½ cup organic coconut milk
1 tablespoon Grass-fed Organic Garlic Ghee
1-2 tablespoons minced fresh chives

Heat a large soup pot over high heat. Once the pot is hot, add Coconut Ghee and swirl the pan. Add leeks and mushrooms (we also added 2 cloves chopped garlic), salt and pepper. Stir often, for about 10 minutes as the mushrooms cook, releasing their liquid. Carefully add the stock; bring to a boil and reduce heat to simmer for 10 minutes. Puree the soup in a blender, adding more stock if a thinner soup is desired. Return to pot and stir in cream or coconut milk along with Garlic Ghee. Serve garnished with chives and a fresh grind of black pepper.
