Whole30® Approved: Red Boat Fish Sauce

Many of you fantastic foodies have heard mention of, or even used, Red Boat Fish Sauce as an ingredient in recipes from some of our favorite chefs (like Melissa Joulwan, Michelle Tam and Tom Denham). Cuong Pham, the man behind the Red Boat, has a long history with fish sauce. Cuong grew up eating high quality sauce from a family owned factory in Phu Quoc (home of some of the world’s best fish sauces), but when he relocated to the U.S. he was disappointed in the fish sauces he found here. (We are too – almost every commercially available sauce contains added sugar, which is off limits for our Whole30 program.) After a return visit to Phu Quoc in 2005, he decided to make that same high quality sauce available stateside.

The Red Boat Quality Pledge

Red Boat Fish Sauce is created using a centuries old process, and every bottle contains only first press sauce (from wild caught anchovies) and sea salt. Red Boat doesn’t contain any of the additives, like sugar and water, that other companies include in their products.

Cuong sources his fish from experienced, local fishermen who understand his commitment to high quality. The fish are then aged in hand-crafted barrels before pressing into pure, delicious fish sauce.

    LOVE that stuff.

    We use it a tool just to punch up umami in all kinds of dishes, a little dash here and there (but not enough to taste fish) can really bring out some serious flavor. Happy to see you guys reppin’ the product!

    so fun. I moved from san francisco to Raleigh, NC last year, was bummed to be on the other coast from where you can buy this sauce from a store front. The sauce is now carried at a store in Chapel Nill, NC – the coolest ever.

    So is this to say that other fish sauces should not be used in the Whole30? I have a bottle that isn’t Red Boat but it still contains just fish, no other ingredients…

    Mike, that’s what we do too. We’ve been making a homemade Tom Kha Gai soup, and the fish sauce really adds the perfect flavor.

    April, not at all! You can use whatever fish sauce you find locally (as long as the ingredients are Whole30-worthy). We just liked Red Boat’s quality, history, and philosophy, so we enlisted them as a “partner.” But that doesn’t mean there aren’t plenty of Whole30-friendly products out there that don’t have the official Whole30 Approved stamp.

    I was in the local co-op buying my first bottle of coconut aminos the other day when the clerk who helped me find that recommended this fish sauce. I didn’t buy it yet because I’m trying one new seasoning at a time but at least I know where to get it when I am ready. Thanks for confirming it meets your guidelines.
