Today’s STM came from Dallas, as an attempt to squeeze more vegetables into our early AM breakfasts. Many of you have the same issue – cramming plenty of veggies at lunch and dinner is easy, but who wants to roll out of bed to a giant, steaming bowl full of broccoli and spinach? Fruit is far more appealing first thing in the morning, but a plate full of berries can also start your day off on the wrong sugar-foot. A chilled bowl of mango gazpacho is a nice compromise – sweet enough to get the taste buds excited, and vegetable-y enough to make it actually count towards your daily veggie intake.
We cheated (sorry, but we’re not this creative) and found a basic gazpacho recipe on line. For summertime fun, we subbed the tomatoes for mango (yum) and switched out a few non-Whole30 ingredients for better, healthier stuff. Prepare this ahead of time, because the longer it chills, the better it tastes.
Steal This Meal: Eggs with Mango Gazpacho (Serves 4)
Preparation:
- Buy some kind of vegetable chopper (like this one from Williams Sonoma), because it has been scientifically proven to speed up your cooking prep time by 72%.
Ingredients:
- 2 cups of 1/4-inch-diced fresh (ripe) mangoes
- 2 tablespoons extra-virgin olive oil
- 1 seedless cucumber, cut into 1/4-inch dice
- 1 red bell pepper, seeded and cut into 1/4-inch dice
- 1 sweet onion, cut into 1/4-inch dice
- 2 medium garlic cloves, minced
- 1 small jalapeno pepper, seeded and minced (optional)
- 3 tablespoons fresh lime juice
- 2 tablespoons chopped fresh cilantro
- Salt and freshly ground black pepper
Directions:
- Process mangoes and EVOO in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients.
- Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving – it’s even better the next day.)
- Serve in a bowl (as a traditional soup) or dump it right over freshly poached, fried or scrambled eggs. Top with fresh basil or cilantro and enjoy!

This sounds goods I LOVE mangoes. LOVE them!!! Did I mention how much I LOVE them? I’ll have to skip the cilantro (tastes like soap to me) maybe add more mango.
I love veggies in the a.m.! I roll out of bed to egg whites cooked in cocnut oil over a bed of spinach, diced yellow bell pepper and lighly poached brocolli slaw. Sometimes I throw a splash of coc milk on top or when I can get pastured chicken eggs the yolk serves as a nice dressing….YUM! My daughter loves sweet potato “hashbrowns” with her eggs…thanks to dad.

I have a quick question.. When I talk about this diet to non-believers, they often ask me where they are supposed to get calcium from if they don’t have dairy. They say that nutritionists state that they need a certain amount of dairy so they don’t get deficiencies like osteoporosis. I try to explain that weight bearing exercises help with that but I don’t really have an answer other than that for that question. It seems to get thrown at me a lot.

the egg cupcake recipe from everyday paleo is another breakfast full of protein & veggies – and i like the fact that i can make a bunch on sunday and eat them on the go all week. i toss in whatever veggies i have around and (nitrate-free, organic) chicken sausage instead of bacon and they are always delicious! just got my bf off zone bars for pre-workout breakfasts by making him a big batch of these – win!

Kim- I explain to people what I read on Dr. Cordain’s website about calcium absorption. You can go to http://www.thepaleodiet.com/faqs/#Calcium and the posts on Calcium will help explain this better than I can summarize it. I’ve found that people still tend to be skeptics, but it helps to have scientific studies to back things up.
This sounds tasty! My sister started Crossfitting recently, and is considering going Paleo, so I send her recipes that look easy & tasty (since her husband does the cooking). Also wanted to say, my boyfriend actually opened Dr. Cordain’s book (I had it from the library), and while he doesn’t agree with many of Cordain’s theories, he has actually been eating Paleo with me at least 1-2x a day (this is in stark contrast to his old eating habits, which were very bread and processed-food heavy). Yeah!

We get this one a LOT. Nutritionists DO say that you need calcium to preserve bone health, and they’re right. And dairy producers like the California Milk Processors Board (with their genius marketing campaign, “Got Milk?”) sold the American public on the idea that dairy was the primary, and best, and (worst of all) essential dietary source of calcium. There’s plenty of calcium in fresh vegetables, fruit, and meat, and if your diet is not overwhelmingly producing an acidic body state (that leaches calcium from your bones), you can retain much more of what you take in, meaning that you don’t actually need all that calcium intake (from diary and calcium supplement, another serious marketing hoax). Check out Dr Cordain’s site for info on calcium metabolism.
Help, this is my first post. I do not even know WHERE to go to post. I am brand new to this and I started the Whole 30 and I am quickly running out of things to make. Where do I go for recipes of all sorts?
Also, what is the concensus on tofu? I love tofu…does it have to go?
Also, what about whole, organic, RAW, milk?
