A Rest Day post by Melissa
Sometimes, good meal ideas come from happy accidents. While in NYC visiting my sister recently, we ordered an omelette for breakfast, with a side of fresh berries. The chef must have misread our order, because he cooked the berries INSIDE the omelette. We were slightly peeved… until we tasted it. Turns out, fresh eggs and warm fruit are a delicious combination. Since then, I’ve been experimenting with a variety of eggs and fruit, and a third ingredient – nuts. (I’ve found pecans and walnuts work well, but almonds and cashews are too hard. As for fruit, blackberries, blueberries, apples and strawberries warm up nicely, but raspberries tend to fall apart.)
